Peanut Coconut Butter Sandwich Spread

Move over PB&J !!! Do you have a child who doesn’t “like” peanut butter and yet you wish you could include this economical staple in his diet? Here is the answer!

In a small bowl, combine roughly equal parts of Coconut butter, Peanut Butter and Honey. Using a fork, stir together well.
Spread on some Really Good Bread.
Enjoy!
You may, of course, alter the ratio of the 3 ingredients, adding more or less of any of them. Even though the Coconut Butter, on its own, is only mildly sweet, when you add a little honey, oh my goodness! It’s incredible!

Sausage Gravy & Egg Breakfast Pizza

A flaky, biscuit crust topped with sausage gravy, scrambled eggs, and cheese. It’s one of our family’s favorite “breakfast for dinner” meals. It’s also a fun change from regular homemade pizza!

Roll out the biscuit dough on a pizza pan or baking stone all the way to the edges. Put in the oven and bake for 8 minutes at 450 F.
While the crust is baking, crumble and cook sausage in a skillet. Add butter to the skillet and stir until melted. (If sausage is especially greasy, reduce or even omit the butter.) Add flour and stir until liquid is mostly absorbed and the meat coated. Add in milk a little at a time while stirring. Still stirring, bring to a boil and let the mixture simmer until you have a thick gravy. Add salt and pepper to taste.
Pour the gravy over the top of the biscuit crust and scramble 2 eggs in the skillet. Add the scrambled eggs to the top of the pizza and cover with cheese. Bake in the oven for another 8-10 minutes, until the cheese is melted and the crust is golden brown.

Easy, Homemade, Chemical-Free Bacon

Easy, homemade bacon without the long curing time or hard to pronounce chemicals. A simple overnight marinade is all that it takes!

Your pork belly may come as one whole piece, or for convenience, you can ask your butcher to slice it for you. Slip the whole piece of belly into a large zip-lock bag, or a shallow glass container.
In a small bowl, combine all the the ingredients together. It will have a paste-like consistency.
Smear the paste all over the pork belly or slices with your hands, or if using the bag, dump the paste into the bag, and use the bag to help smear the paste all over the meat.
Place the pork belly into the fridge and let sit overnight. By morning, your bacon will be ready to enjoy for breakfast. If your pork belly was not pre-sliced for you, use a sharp knife to slice pieces off as thick as you like.
Fry bacon slices slowly in a cast iron pan over low-medium heat. Be careful not to use high heat because the sugar in the bacon may burn.

Grain-Free Pigs in a Blanket

Kid-friendly main course and classic party appetizer!

Preheat oven to 400 degrees. Grease a cookie sheet (or use an ungreased pizza stone).
Using the whisk attachment, mix together eggs, butter, salt, and garlic. Add coconut flour and baking powder and beat the batter really well until there are no lumps and the eggs have had a good beating (it sounds harsh, I know, but the key to fluffy, grain-free baked goods is thoroughly beating the eggs).
Drop batter by big spoonfuls onto prepared sheet. Keep the biscuits plump so you can push hot dog pieces into them.
cut hot dogs into fourths and push one piece in each biscuit. Sprinkle grated cheese (or place sliced cheese) atop the pigs in the blankets.
Bake for 15 minutes.

Fresh Beef Sausage

This sausage can be used in a variety of applications—as patties or crumbled as a pizza topping, in cream gravy, chili, strata, and lots of other dishes.

Combine all the ingredients. Age in the refrigerator in an airtight container for 24 to 48 hours for best flavor.
Form into patties and cook or crumble and cook in a cast-iron skillet or griddle to desired doneness.

Chicken Fried Steak

This chicken fried steak recipe will knock your socks off. Smother it in some country gravy and you are good to go.

Use a meat mallet to pound your cube steaks until they are about a quarter inch thick.
Put 2 cups of flour in a pie pan with a little salt and pepper.
In another pie pan, mix your baking powder, baking soda and some salt and pepper. Beat in the buttermilk, egg, hot sauce, and garlic.
Dredge each cube steak by coating it in a thin layer of flour. Then drag it through the batter, and dredge a second time in the flour. There should be no moisture left on the outside of the steaks.
Heat the lard in a deep cast-iron skillet to about 325 degrees Fahrenheit (165 degrees Celcius).
The chicken fried steaks should be fried until golden brown on both sides. This could take about 3 to 5 minutes per side.
Drain the chicken fried steaks on a paper towel.

Easy Baked Bacon

If your family loves bacon like mine does, this is a simple way to cook a whole batch without getting spattered with grease!

Preheat oven to 375 degrees F.
Line up bacon slices on a stainless steel cookie sheet.
Bake for 15-25 minutes, depending on desired crispiness.
Serve it while it’s hot!
