    I made this recipe up on a whim the other day when looking for a fun, different snack I could feed my kids. All of us loved it but my soon-to-be four year old who didn't love the texture. It has a texture similar to tapioca pudding, if you're wondering. Chia seeds are packed with nutrition - they are high in protein, calcium, omega-3 fatty acids, and antioxidants. They are a superfood! Enjoy this pudding, it makes a great snack. Feel free to add more sweetener to your liking. This is not very sweet as written since we do not sweeten things nearly as much as we used to.

    Recipe Instructions:

    Combine coconut milk, chia seeds, apples, and a generous amount of cinnamon (I use a lot). Let sit for 20-30 minutes until the mixture thickens. Serve topped with additional cinnamon and enjoy!

    *Make this sweeter, if desired, by adding some honey or other sweetener to the coconut milk mixture.

  • FYI, the coconut milk I use in this recipe is homemade so it is not nearly as thick as canned coconut milk. If using canned coconut milk, you may want to add some water to thin it out a bit otherwise the proportions may be off.     I forgot to add cinnamon, but it was still delicious. 2 of the kids didn't care for the texture, but they all liked the taste (the other 2 that were here to tried it loved it and finished off the rest of the pudding from the ones that didn't like the texture.) I added just one can of coconut milk instead of 2 c. of milk and that worked out just fine without thinning. Next time, maybe I'll try blending it with the coconut and then adding the apples after to make the chia seeds smooth. Reply
    • I find that one of my kinds likes the "bubbles" of the chia and the other doesn't. Blendeing helps the one that doesn't. :) Reply
      • Blending is a great idea! One of my little ones doesn't like the texture either, so I'll try to blend it too! Reply
