    This lovely roast chicken with carmelized apples and onions makes a great meal. The pumpkin beer keeps the meat moist and juicy.

    Recipe Instructions:

    Pre-heat oven to 350. Clean the chicken and remove any giblets. Set on a rack in a roasting pan. In a mini processor, or small bowl, combine the butter and herbs. Using your fingers, CAREFULLY separate the skin on the chicken and smoosh the butter mixture between the skin and the meat all over. Rub the outside of the skin as well until the entire chicken is covered in the butter herb mix. Fill the cavity with the onions apples and raisins. If it all won’t fit inside the bird, place the remainder in the roasting pan. Pour the beer and water into the bottom of the roasting pan, and then loosely cover with foil. Bake for about an hour and a half, removing the foil in the last 15 minutes and raising the temp to 400 to brown up the skin. Allow to rest before carving. Reserve the drippings to make gravy.

    Chicken Gravy

    Strain the drippings from the roasting pan. In a skillet, melt 2 T butter and mix in 2 T flour, cooking till golden– about five minutes. Pour in the drippings and whisk until thickened, seasoning to taste with salt and pepper. Add water or broth as needed to bring to desire consistency.
