Cherry Cream Pie Recipe Description: A cross between a cheesecake and a fruit pie, this is a wonderful dessert, especially with extra whipped cream! Prep Time: 30 MinutesCook Time: 10 MinutesServings: 8 slices (1 pie) Difficulty: Moderate Recipe Ingredients: 1 pie crust of choice, preferably grain-free* 8 oz. cream cheese, softened 1 c. whipping cream, not ultra-pasteurized plus extra for serving 1/4 c. sucanat 1/4 tsp. liquid stevia 1/2 vanilla bean 1/3 c. organic mini chocolate chips 1 qt. home-canned sliced sweet cherries (no-sugar), about 3 c. 1/4 c. honey 1-2 T. arrowroot 1/2 c. water or juice from cherries Recipe Instructions: Pre-bake pie crust and set aside to cool. Whip the cream to soft peaks, and set aside. Scrape out the vanilla bean into a bowl with cream cheese, sucanat and stevia, and beat until fluffy. Gently stir in the whipped cream, and spread mixture into pie crust. Top with miniature chocolate chips, enough to cover the surface of the pie. Drain cherries and dump into a saucepan with the honey to begin heating. Stir together water and arrowroot and add to cherries, cooking until desired thickness is reached. Spread hot cherry mixture over the top of the pie (chocolate chips will melt), let cool and refrigerate until fully chilled. Enjoy with extra whipped cream! *A nut-based crust is delicious with this! I used a recipe calling for almonds, pecans, coconut, dates, butter and honey.
