One word: YUM. I made this recipe up on a whim the other day. I like to take my kids to the park each Friday and we always bring a snack. On this day, I decided to be a really cool mom and make them a treat for the park. It is usually hardboiled eggs and carrot sticks. They loved this and so did I. The texture is perfectly creamy and you can never go wrong with chocolate!
Would this be good with raw dairy milk?
I haven’t tried it with raw dairy but I am sure it would be wonderful in this recipe!
*A note: The coconut milk I use is homemade, so it is a bit thinner than the canned variety (recipe: http://kamisniche.blogspot.com/2011/11/homemade-coconut-milk.html). If you are using canned coconut milk, you may need to thin it out a bit with water in order for the proportions to be correct.
Well, I just made it, and it is very nice! I used raw goat milk, and when I tasted it, it wasn’t quite sweet enough, so I added 2 Tbsp. of Rapadura, and tasted it. Much better. Then I added 2 Tbsp. of coconut butter that I had made from an Jami’s recipe ~http://eatnourishing.com/recipe/homemade-coconut-butter/. That made it perfect! It is getting chilled now. This will be lunch. 🙂 I had 2 very ripe avocados I needed to use. *happy sigh….*
