Recipe Description:

I wanted to make cookies for my family one night as a special treat, but as I looked at my pantry and my refrigerator it became apparent that I was out of many ingredients. I decided to try and whip something up anyway with things I had on hand and they came out great! The taste was delicious. The texture is crunchy, rather than chewy, but for no eggs or butter I was happy. I will remember these particular almond flour cookies to make for some friends who have dairy, egg, gluten allergies and those eating only honey sweetened desserts. Fast and delicious!

    1. These are delicious! I can no longer eat gluten, soy, chicken eggs, or casein due to food sensitivities, but these were so close to the real deal that I didn’t even notice the things missing from the old recipe. Thank you so much for giving me a treat I can enjoy without guilt. I did use coconut nectar instead of honey since I didn’t have the honey. Turned out perfect.

    2. Can you make blanched almond flour by grinding blanched almonds in a (non-coffee dedicated) coffee grinder?

    3. This recipe is amazing. Seriously. So happy to have found a chocolate chip recipe that I can feel GOOD about eating and giving to my family! No refined sugar, no gluten, no dairy, no eggs…thanks so much! Have made for other that don’t follow the same diet we do, and they loved them too!

    4. Just a note that according to the GAPS diet book neither chocolate not cocoa are allowed which would suggest this recipe should Not be in the section for gaps dieters.
