“Lasagna” Rolled Meatloaf Recipe

This delightfully rich meatloaf is our family's favorite way to eat meatloaf! With the ricotta filling, it smells and tastes like lasagna, without the pasta!

Instructions:
Whisk one egg with the almond flour and the next 5 ingredients. Add ground beef and mix well. Roll out into a large rectangle (around 9×11 or so) on a sheet of parchment paper. In a separate bowl, mix together the other egg with ricotta cheese, cheddar, italian seasoning, salt and pepper. Spread over meatloaf and roll up, starting with the long side and pinching ends shut. Place seam side down in a large baking dish and top with desired amount of pasta sauce. Bake at 350 for 30 minutes, then top with mozzarella and bake for another 30 minutes or so, until bubbly. Slice and enjoy!
