What a great idea! Great way to add protein to oatmeal 🙂 Do you temper the eggs before adding them in so the hot oatmeal doesn’t make them curdle?
I only beat the eggs thoroughly with the milk and then stir rapidly as I gradually add them to the hot oatmeal. I think if you tried to temper them, they would cook before you added them and that would not work out. I hope you will enjoy this recipe as much as I do!
