Peanut Butter, Coconut, Chocolate Chip, Oat Bars

Recipe Description:

These bars are a great to have on hand for snacks or breakfast on the go. With ingredients like oats, bananas and peanut butter you (and your kids) will feel satisfied and fueled for whatever you have on your agenda.
This recipe does not list any added sweetener. If your kids (or you) prefer a sweeter bar you can add one tablespoon of pure maple syrup or honey. Very ripe bananas tend to be super sweet so we find these to be just right for our tastes.

      1. I think if you switch the bananas for applesauce it won’t hold together as well. Bananas are such a great binder (which is why they sub so well for eggs in baked goods). With all of the other ingredients in these they don’t taste overly banana-y, unless you particularly don’t like banana.

    1. Question: I’m making these for my 21 m/o & using almond butter due to his peanut ‘sensitivity.’ What other things can I add in to up the nutrition? Would Chia seeds loose any benefit from being baked? Curious to know if I can sneak in some shredded carrot or something of that sort. TIA 8D

    2. Chia seeds would be a great addition. I think carrots would work as long as you don’t add too much. They can release water when cooked. Just don’t add too much “chunky” stuff or the binders won’t be enough to hold it all together. You could always double the recipe but don’t double the coconut or chocolate chips and then replace those with other things like some shredded carrots or zucchini (mind the water in these as well), chia seeds, flax seeds, etc and then bake in a 9X13 pan.
