Texas Quiche

    1. Yummy! I made this for my moms of preschoolers group. I didn’t have arrowroot so I subbed coconut flour. I tossed in some cooked ground beef I had in the fridge. This was a hit!

    2. I took this to a book group dinner. I cut it into small pieces as a appetizer and it was well received. I didn’t have arrowroot powder, so I used 3 tablespoons clear-jel, 3 tablespoons potato flour and one heaping tablespoon of soft wheat flour. I used two small slices of pickled jalapeño pepper, a pickled habanero pepper, and some pickled red sweet peppers. I didn’t have a pint of sour cream, so I used 1 cup sour cream and 1 cup drained kefir. I also added some freshly ground black pepper. I forgot the baking powder, but I didn’t miss it. A forgiving, easy, tasty recipe.
