Roasted Butternut Squash with Maple Cinnamon Butter Recipe Description: A quick and simple side dish, that can be made in a matter of minutes. Prep Time: 15 MinutesCook Time: 40 MinutesServings: 6-8 Difficulty: Easy Recipe Ingredients: 2-3 Butternut Squash 2 T Extra Virgin Olive Oil Salt and Pepper 1/2 C Cultured Butter, softened 3 T Organic Maple Syrup 1/2 t Cinnamon Recipe Instructions: Cut squash in half, and remove seeds. Place on a baking sheet Drizzle with Olive Oil, add salt and pepper to taste. Bake at 375 degrees for 30 minutes or until fork tender. Remove for baking sheet and cool slightly. To make butter: Place butter in a mixing bowl, cream with a wooden spoon. Add Maple Syrup and Cinnamon, mix thoroughly. Remove squash from shell and place in a bowl. Mash slightly.
