Golden Potato, Bacon & Spinach Soup Recipe Description: A rich and satisfying soup. Prep Time: 15 MinutesCook Time: 1 Hours and 15 MinutesServings: 6 Difficulty: Easy Recipe Ingredients: 1/4 pound uncured bacon 1 extra large yellow onion, chopped 4 large celery stalks, thinly sliced 8 medium gold potatoes, skin left on, cut into small pieces 8 cups of homemade beef stock 8 ounces of fresh spinach, washed well, stems trimmed, roughly chopped unrefined sea salt to taste freshly ground pepper to taste Recipe Instructions: In a large pan over medium heat, cook the bacon until crispy, about 10 minutes. Remove the bacon, keeping the fat in the pan. Add in the onion and celery. Cook over medium heat, stirring occasionally, until very soft, about 30 minutes. Chop the cooled bacon and add it back into the pan. Add in the chopped potatoes and beef stock. Bring to a boil and cook over medium heat, stirring occasionally, until the potatoes are soft, about 30 minutes. Add in the spinach and simmer for 2 minutes.
