Italian Vegetable Sauté Recipe Description: Great as a side dish or over warm pasta. Prep Time: 20 MinutesCook Time: 50 MinutesServings: 6 Difficulty: Easy Recipe Ingredients: 1/2 cup extra virgin olive oil 1 large white or yellow onion, sliced 4 cloves of garlic, minced 1 large eggplant, cut into bite-sized pieces 1 medium zucchini, cut into bite-sized pieces 8 ounces of large button mushrooms, quartered 1/2 cup fresh basil, chopped unrefined sea salt extra olive oil Recipe Instructions: In a large skillet combine the olive oil, sliced onions and a sprinkle of salt. Cook on medium heat, stirring often, for 30 minutes until the onions are starting to brown. Add in the minced garlic and other vegetables. Cook, stirring often, until tender, about 20 minutes.* Add in the basil, mixing well. Salt to taste. *If the pan gets too dry add in a little more olive oil.
