Sweet Potato, Carrot & Beef Stew Recipe Description: A sweet and savory stew, perfect for fall or winter. Prep Time: 20 MinutesCook Time: 1 Hours Servings: 6 Difficulty: Easy Recipe Ingredients: 1/4 cup extra virgin olive oil 1 large yellow onion, chopped 4 large cloves of garlic, minced 1 pound pastured stew beef, cut into bite-size pieces 5 large carrots, peeled and cut into medium pieces 2 large sweet potatoes, peeled and cut into bite-size pieces 1 quart (4 cups) homemade beef stock 1/4 cup arrowroot powder 1/8 teaspoon freshly ground nutmeg freshly ground pepper to taste sea salt to taste Recipe Instructions: In a large stockpot, heat the olive oil over medium heat. Add in the onions and garlic, stirring frequently. Cook until soft. Add in the stew beef and continue to cook, stirring frequently until the beef is browned on all sides. Add in the chopped carrots, sweet potatoes and beef stock. Bring to a boil, turn the heat down and simmer with the lid on for 45 minutes until the carrots are tender. The sweet potatoes will be falling apart at this point. Mix the arrowroot with 1/4 cup cold water, pour into the stew and stir until the stew thickens. Add in the nutmeg. Salt and pepper to taste.
