Taco Meat with Hidden Veggies Recipe
Recipe Description:
I cook these tacos for my kids. They love tacos, but hate vegetables. Don't tell them that this taco meat recipe is more than half veggies!
Recipe Ingredients:
1 Pound Organic, Grass Fed Ground Beef
12 Organic Corn Tortillas
Lard
1 Tsp Garlic Powder
2 Tsp Chili Powder
2 Tsp Cumin
1 Bay Leaf
2 Medium Tomatoes, Diced
2 Medium Tomatoes, Sliced
1 Zucchini, Grated
1 Pattypan (scalloped) Squash, Grated
1 Medium Mild Green Chili, Minced
Sea Salt
Black Pepper

Instructions:
Brown ground beef in a cast iron pan.
Add in the grated squash, diced tomatoes, green chili and seasonings.
Salt and pepper to taste.
Simmer on medium heat until the liquid reduces to a sauce on the meat.
In a separate cast iron pan, bring the lard up to temperature.
Fry the corn tortillas in the lard and set aside to harden.
Dress the shells with a large helping of meat. Top with fresh tomatoes.
For a little more thrill add some hot sauce and homemade crème fresh.
