    I cook these tacos for my kids. They love tacos, but hate vegetables. Don't tell them that this taco meat recipe is more than half veggies!

    Recipe Ingredients:

  • 1 Pound Organic, Grass Fed Ground Beef
  • 12 Organic Corn Tortillas
  • Lard
  • 1 Tsp Garlic Powder
  • 2 Tsp Chili Powder
  • 2 Tsp Cumin
  • 1 Bay Leaf
  • 2 Medium Tomatoes, Diced
  • 2 Medium Tomatoes, Sliced
  • 1 Zucchini, Grated
  • 1 Pattypan (scalloped) Squash, Grated
  • 1 Medium Mild Green Chili, Minced
  • Sea Salt
  • Black Pepper
  • Recipe Instructions:

    Brown ground beef in a cast iron pan.

    Add in the grated squash, diced tomatoes, green chili and seasonings.

    Salt and pepper to taste.

    Simmer on medium heat until the liquid reduces to a sauce on the meat.

    In a separate cast iron pan, bring the lard up to temperature.

    Fry the corn tortillas in the lard and set aside to harden.

    Dress the shells with a large helping of meat. Top with fresh tomatoes.

    For a little more thrill add some hot sauce and homemade crème fresh.
