The cake is always gone at parties. They don't even realize the nutrient dense cake they just ate. I use maple syrup as the sweetener. It is a much better option than table sugar it contains zinc and manganese. If you don't have access to sprouted flour you can always use regular spelt flour or white wheat pastry flour. Sprouted flour is now showing up in health food stores. Sprouted flour digest as a vegetable and not as a grain there by releaving stress on the body.

    Recipe Instructions:

Cream butter and oil together. Add next 6 ingredients, then combine dry ingredients adding a cup at a time and mixing until well combined, about 2 minutes. Pour into a 9x13 greased baking pan and bake for 40 to 45 minutes at 350°F . If you would like to bake it in a Bundt pan, increase baking time by 10 minutes.

    Chocolate Kefir Topping

    1/4 cup of plain kefir

3 ounces of organic chocolate chips or cacao chocolate chips

Place chocolate in double broiler pan and place on low heat and stir until melted. Remove from heat and when chocolate is warm, but not hot, about 100 degrees or less than add kefir and stir till well combined. Drizzle chocolate kefir over cake.

Would this require a large or a smaller bundt pan? It looks and sounds fabulous! Reply
    • A smaller bundt pan works best, but I have made it in a large one. It just wasn't as high. Reply
