How do you know how much starter to use in recipes?
Depends on the recipe but generally 1 cup of starter gives the rising power of 1 pkt dry yeast… Then you have to reduce recipe by about 3/4 c flour and 1/2 c water… But you have to “feel” it. Side note…I just mix this up, ferment and bake without adding more flour or doing another rise. A little dense, but good!
How do you feed your starter? And how can you keep it when you don’t want to use it for a while…or store it?
Feed with equal amounts of water and flour (or water kefir and flour) daily. Store in the fridge a few days if needed, but this one is easy enough just to whip up and start again!
