    A quick, easy, light and refreshing dessert that is perfect after a heavy meal.

    Recipe Instructions:

    Preheat the oven to 350 degrees. Grease a 9 or 10-inch pie plate and set aside.

    In a blender, combine all ingredients and blend until smooth. Pour into the greased pie plate and bake 45-55 minutes or until a knife inserted into the center of the pie comes out clean.

    • I would use coconut flour or arrowroot, myself. Though if you use coconut flour, you probably don't need as much because it really absorbs moisture. Reply
    • I personally use a mix of sorghum and buckwheat. It would work with wheat if you eat gluten, rice, etc... Reply
