  • Recipe Description:

This wonderful medley of flavors is our go-to meal when guests are over and our favorite dish to deliver to families in need. As a one-dish meal, clean up is super simple. It's a curry that is sure to please everyone at your table!

    Recipe Ingredients:

  • 2 – 3 Tbsp butter or oil
  • 1 cup chopped onion (or 1/4 cup minced)
  • 1 clove garlic, minced
  • 1 lb ground beef (or other meat or even chicken.)
  • 1 1/2 Tbsp curry powder
  • 2 1/4 tsps salt
  • 1/8 tsp pepper
  • 1/8 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp turmeric
  • 2 1/2 – 3 cups tomatoes (approx. 1 1/2 14 oz. cans)
  • 3 potatoes
  • 2 1/2 – 3 cups peas
  • Recipe Instructions:

Melt oil or butter in a large pan. Add onion and garlic (if using minced, add a bit of water to reconstitute).

Cook until onion softens and garlic begins to brown (watch it carefully – garlic burns easily!)

    Add meat and cook thoroughly.

Add curry, salt and spices. Stir well.

    Dice potatoes.

Add potatoes, tomatoes and peas to the pan.

Bring to a simmering boil. Reduce heat, cover and simmer for 25 minutes, or until potatoes are done.

Made this dish tonight - YUM! Love the balance of spices, nothing tastes too overpowering, including the curry. This will become one of my go-to recipes. Thanks for sharing!!
