Water kefir carbs?

    We eat a fairly low-carb diet for health reasons.  Generally, only having one serving of high carbohydrate food a day, i.e. one slice of whole grain sourdough bread or one medium baked potato.  I would like for us to drink water kefir, but I am concerned that we’d be adding more carbs.  Do you know anything about that?

    From what I have learned is that the carbs are quite low in water kefir. The reason is that they are used in the fermentation process, so the more sour, the less carbs.
