    A simple one dish meal for those nights when you don't want to do a hundred dishes (wait, that's every night! ha!). Round steak is an inexpensive cut for those watching the budget and creamy sweet potatoes fulfill our starchy cravings.

    Recipe Instructions:

    Layer sweet potato slices in the bottom of a large casserole dish. Top with sliced onions and bell peppers.

    Heat a cast iron skillet on high heat and melt coconut oil. Cut round steak into 6 portion sized pieces and sprinkle with salt.

    When oil is hot, carefully place steak into the pan and sear on both sides for about 1-2 minutes.

    Remove from the pan and place on top of sweet potato mixture.

    Reduce heat on pan to medium. Dissolve arrowroot flour in beef stock and set aside. Sautee garlic in drippings until aromatic. Do not allow to turn brown or burn. Pour in tomato puree, honey, salt, red pepper flakes and thyme. Bring to a simmer.

    Slowly pour in dissolved arrowroot flour, whisking constantly to prevent lumps. Bring back up to a simmer and then pour sauce over meat and vegetables.

    Place casserole in a 350 degree oven and bake for 45-50 minutes, or until sweet potato slices are tender.

    This looked so good that I tried it. It did not look like your picture, the meat and sweet potatoes did not finish at the same time, and it was very tomatoey. I am wondering if perhaps the recipe should say 2 cups of beef broth and 1/2 cup of tomato puree which I am guessing is tomato sauce. Reply
